Ingredients:

2 large artichokes, prepped and trimmed
2 lemons, sliced in half
1/2 lb ground chicken, cooked
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
1 cup whole milk
1/2 cup cheddar cheese, shredded
1/3 cup hot sauce (*I used Franks)
Blue cheese crumbles, garnish
Salt and pepper to taste

Directions:

Bring a large pot of water to a rolling boil. Add the lemon halves and the prepped artichokes to the pot, then reduce the heat to a simmer. Cover the pot with a lid and allow the artichokes to cook gently for approximately 30 to 35 minutes, or until they are tender. Once cooked, carefully remove the artichokes from the pot and place them stem-side up on a clean paper towel. This allows any excess water to drain out thoroughly.

Next, preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly spray a small baking pan with non-stick cooking spray to prevent sticking. Carefully place the cooked artichokes into the prepared baking pan. Gently splay open the leaves of each artichoke, creating small pockets. Evenly sprinkle the cooked ground buffalo chicken in between these layers, ensuring each artichoke is well-filled.

Meanwhile, prepare the rich cheese sauce. In a small saucepan, melt the unsalted butter over medium heat. Once the butter is melted and bubbly, add the all-purpose flour and whisk continuously for about one minute to create a roux.
