Baked Eggocado: Your Go-To Healthy & Easy Breakfast

Yield: Serves 2 to 3

Cook Time: 15 to 18 minutes

Ingredients for Baked Eggocado:

  • 3 large, ripe avocados (choose firm yet slightly yielding avocados for best results)
  • 3 large eggs (one per avocado half)
  • A pinch of Cumin (adds a warm, earthy flavor)
  • A dash of Red Pepper Flakes (for a touch of heat, optional)
  • A sprinkle of Chili Powder (for smoky depth, optional)
  • Grated White Cheddar Cheese (or your preferred cheese, for melty goodness)
  • Fresh Lemon juice (crucial for preventing browning)
  • Salt and freshly ground black pepper (to taste)
  • Optional toppings: chopped chives, fresh cilantro, crumbled bacon, cherry tomatoes

Directions for Perfect Baked Eggocados:

Step 1: Preheat and Prep. Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Prepare a baking sheet by spraying it lightly with a non-stick cooking spray or lining it with parchment paper. This will ensure your Eggocados don’t stick and make cleanup a breeze.

Step 2: Prepare the Avocados. Take each ripe avocado and carefully cut it in half lengthwise, circling around the pit. Gently twist the halves apart. Step 3: Create the Egg Well. If the avocado’s natural well isn’t large enough to hold an egg, you can gently scoop out a small amount of the avocado flesh from the center. Be careful not to create a hole in the bottom. You can save this scooped-out avocado for guacamole or a smoothie!

Step 4: Add the Eggs. In a small bowl, lightly whisk one egg. Alternatively, you can carefully crack a whole egg directly into the avocado well. The goal is to fill the well without overflowing it. If using whisked egg, spoon just enough of the whisked egg mixture into the well of each avocado half. It doesn’t take very much, so be mindful not to overfill. You might have some leftover egg if your avocado wells are small.

Step 5: Garnish and Season. Now comes the fun part! Garnish the tops of your egg-filled avocados with whatever your heart desires. A classic choice is a sprinkle of cumin, some grated cheese (white cheddar melts beautifully), and a dash of red pepper flakes for a kick. Other wonderful options include chili powder, chopped chives, a pinch of salt, and freshly ground black pepper.

Step 6: Bake to Perfection. Carefully place the prepared Eggocados onto your baking sheet. Transfer the baking sheet to the preheated oven. Bake for approximately 15 to 18 minutes. The exact baking time will depend on your oven and how firm you like your egg yolk. For a runny yolk, aim for closer to 15 minutes.
