Strawberry Rhubarb Mousse with Meyer Lemon Whipped Cream

Ingredients:

For the Mousse:
1 ½ cups fresh strawberries, cleaned and halved (reserve a few for garnish)
1 ½ cups frozen or fresh rhubarb, sliced (if using fresh)
1 large lemon, zested and juiced
¼ cup honey (adjust to taste based on rhubarb tartness)
1 tablespoon unsalted butter, diced
1 cup prepared whipped cream (see notes for making from scratch)
Fresh mint sprigs, for garnish

For the Meringue:
3 large egg whites, at room temperature
¼ teaspoon cream of tartar
¾ cup granulated sugar

For the Meyer Lemon Whipped Cream:
1 cup heavy whipping cream, very cold
1 tablespoon Meyer lemon juice
2 tablespoons granulated sugar
1 teaspoon Meyer lemon zest

Directions:

For the Mousse Base:
1. Preheat your oven to 350°F (175°C). Lightly spray a 9×13 inch baking dish with non-stick cooking spray.
2. Arrange the halved strawberries and sliced rhubarb evenly in the prepared baking dish. In a separate small bowl, whisk together the lemon juice, lemon zest, and honey until well combined. Pour this sauce evenly over the strawberries and rhubarb, ensuring all pieces are well coated.
3. Dot the top of the fruit mixture with the diced butter. Roast in the preheated oven for approximately 30-40 minutes, or until the fruits are tender and have released their juices. The rhubarb should be soft but not mushy.
4. Remove the roasted fruit from the oven and allow it to cool completely. Once cooled, strain the strawberries and rhubarb through a fine-mesh sieve, gently pressing to extract as much liquid as possible. You may save the flavorful liquid for another use, such as a refreshing drink or topping. Transfer the strained fruit solids to a food processor and pulse until you achieve a smooth puree. Set aside.

For the Meringue:
1. In the bowl of a stand mixer fitted with a whisk attachment, combine the room-temperature egg whites and cream of tartar. Begin whisking on medium speed until the mixture becomes frothy and bubbly.
2. Gradually add the granulated sugar, one tablespoon at a time, while continuing to whisk. Increase the mixer speed to high and beat until stiff, glossy peaks form. The meringue should hold its shape firmly when the whisk is lifted.

To Assemble the Mousse:
1. In a large mixing bowl, place ½ cup of the strawberry-rhubarb puree. Gently fold in about ⅓ cup of the prepared meringue. The key here is to be very gentle to maintain the airiness of the meringue. Gradually add more puree as needed, continuing to fold gently until the desired consistency and color are achieved, ensuring all meringue is incorporated.
2. Next, gently fold in 1 cup of the prepared whipped cream into the strawberry-rhubarb meringue mixture. Again, use a light hand to preserve the airy texture of the mousse. The goal is a light, cloud-like consistency.

For the Meyer Lemon Whipped Cream:
1. In a stand mixer with a whisk attachment (ensure the bowl and whisk are very clean and cold), combine the cold heavy whipping cream, Meyer lemon juice, granulated sugar, and Meyer lemon zest.
2. Whisk on medium-high speed until medium peaks form. The cream should be thick and hold its shape but still be soft and not over-whipped. Set aside in the refrigerator until ready to garnish.

To Serve:
