  • 1 cup good quality mayonnaise
  • 1 cup buttermilk
  • 2 tbsp finely diced shallots
  • 1 tbsp white wine vinegar
  • 2 cups crumbled blue cheese
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, finely chopped, for garnish
  • Fresh grapes, for serving
  • Crisp apple slices, for serving
  • Endive leaves, for serving
Sweet Potato Ginger Dip 
  • 3/4 tsp curry powder
  • 1 cup mashed cooked sweet potato (from about 1 medium sweet potato)
  • 1/2 cup plain Greek yogurt
  • 1/2 cup water
  • 1/4 cup tahini
  • 2 tbsp fresh lemon juice
  • 2 tsp grated fresh ginger
  • 3/4 tsp kosher salt
  • Assortment of fresh veggies (carrots, celery, cucumbers, bell peppers) for serving

Spiced Cheddar Dip

  • 3 cups shredded sharp cheddar cheese
  • 1/3 cup dry white wine
  • 1/3 cup sour cream
  • 3 tbsp prepared horseradish
  • 1/2 tsp smoked paprika
  • Salt and freshly ground black pepper to taste
  • Assortment of crackers for serving

Directions:

Blue Cheese Walnut Dip

  1. In a large food processor, combine the mayonnaise, buttermilk, diced shallots, and white wine vinegar. Pulse the mixture until it achieves a smooth consistency.
  2. Next, add the crumbled blue cheese to the processor and pulse briefly until it’s slightly chunky, leaving some texture.
  3. Then, incorporate the toasted walnuts and pulse again until the mixture is relatively smooth, though some small walnut pieces are desirable for texture.
  4. Season generously with salt and pepper to taste. Pulse one more time to combine, then taste and adjust seasonings if necessary.

  1. In a large food processor, combine the shredded cheddar cheese, dry white wine, sour cream, prepared horseradish, and smoked paprika.
