Recipe: Baked Thai Beef Stuffed Artichokes

Baked Thai Beef Stuffed Artichokes

Yield: Serves 4

Prep Time: 15 minutes

Cook Time: 1 hour

Ingredients:

1 tablespoon olive oil
1 lb ground beef
1 large shallot, diced
2 tablespoons Thai roasted red chili paste
1 tablespoon chili garlic sauce
4 large artichokes, trimmed, cleaned
2 large lemons, cut in half
1 cup mozzarella, shredded
salt and pepper to taste

for the Thai glaze:
3 tablespoons unsalted butter
1 tablespoon Thai roasted red chili paste
1 tablespoon chili garlic sauce
salt and pepper to taste

Directions:

Preheat oven to 400 degrees Fahrenheit (200°C).

Bring a large stock pot filled with water to a rolling boil. Add the trimmed artichokes and the lemon halves to the boiling water. Boil the artichokes for approximately 20 minutes, or until tender when pierced at the base. Once cooked, carefully remove the artichokes and place them stem side up on a wire rack to allow any excess liquid to drain thoroughly. This step ensures the artichokes are tender and ready to be stuffed without becoming watery.

Meanwhile, prepare the flavorful beef filling. Preheat a medium-sized skillet over medium-high heat. Add the olive oil, diced shallot, and a pinch of salt and pepper. Sauté the shallots for about two minutes until they are softened and fragrant. Next, add the ground beef to the skillet and cook, breaking it up with a spoon, until it is no longer pink, which usually takes about five minutes. Drain any excess fat. Stir in the Thai roasted red chili paste and chili garlic sauce, mixing well until thoroughly combined with the ground beef and shallots. Remove the skillet from the heat.

Prepare a small baking dish by spraying it with non-stick cooking spray. Take each artichoke and carefully cut a small portion off the bottom of the stem so that it can stand evenly and stably in the baking dish. Repeat this process for the remaining three artichokes. Arrange the prepared artichokes in the baking dish and generously stuff them with the seasoned ground beef mixture, ensuring the filling is nestled into the leaves and central cavity. Sprinkle approximately 1/4 cup of shredded mozzarella cheese evenly over the top of each stuffed artichoke. Place the baking dish into the preheated oven and bake for about 10 to 12 minutes, or until the cheese is beautifully golden brown and bubbly. Remove from the oven.

While the artichokes are baking, prepare the Thai glaze. In a medium saucepan, melt the unsalted butter over low heat. Once melted, stir in the Thai roasted red chili paste and chili garlic sauce. Whisk continuously until the mixture is smooth and well combined. Taste and add salt and pepper if desired, adjusting to your preference. This glaze adds an incredible depth of flavor and a glossy finish.
