My enthusiasm for Envy apples, in particular, reached new heights. As someone who enjoys an apple daily, I can confidently say that Envy apples offer an unparalleled balance of sweetness and a truly satisfying, crisp crunch with every bite. Their firm texture and delightful flavor make them exceptional for snacking, but their true brilliance shines in cooking. Unlike many apple varieties, Envy apples maintain their vibrant color and don’t turn yellow or brown when sliced, making them an ideal choice for elegant preparations. This characteristic, combined with the rich depth of Flor de Caña rum, sparked the idea for a truly special dish.

Ingredients

  • 3 tbsp Unsalted butter
  • 2 medium Yellow onions, sliced thinly
  • 2 tbsp Flor de Caña Rum
  • 2 to 3 medium Envy Apples, sliced thinly
  • 3/4 cup Shredded cheddar cheese
  • 1 sheet Puff pastry, defrosted
  • 1 large Egg, whisked
  • Fresh thyme, for garnish

Instructions

  1. In a large skillet preheated to medium-low, melt the butter. Add the thinly sliced onions and cook, stirring occasionally, until they become soft and golden brown (about 15-20 minutes). Pour the Flor de Caña rum into the skillet and stir. Cook for an additional 2 to 3 minutes until the rum is absorbed. Remove from the heat and set aside.
  2. Line a baking sheet with parchment paper. Place 3 to 4 sliced apples in a row slightly overlapping to create the base for 9 equally sized rectangular tarts. Top the apple slices with shredded cheese and the caramelized rum onions.
  3. Roll out a sheet of puff pastry and cut it into 9 equally sized rectangles. Place one puff pastry rectangle on top of each apple mixture. Using a fork, crimp the sides to help seal the pastry and prevent excessive rising. Brush the tops with egg wash and bake for about 20 minutes at 400°F (200°C) or until golden brown.
