Enchilada Mexican Meatball Stacks

Yield: Serves 2

Prep Time: 20 minutes

Cook Time: 10 minutes

Ingredients:

For the Meatballs:
1 pound ground chicken
1 egg
1/3 cup panko breadcrumbs
1/4 cup fresh cilantro, finely chopped
1/4 cup yellow onion, grated
2 garlic cloves, minced
Salt and freshly ground black pepper to taste

For the Creamy Refried Beans:
1 (15 oz) can refried beans
1/2 cup cheddar cheese, grated
2 tablespoons milk

For Assembly & Garnish:
6 corn tortillas, crisped in the oven or lightly fried
1 fresh tomato, chopped
1 (15 oz) can red enchilada sauce, heated
Sour cream, for garnish
Fresh or pickled jalapeños, sliced, for garnish
Pepper Jack cheese, shredded, for garnish

Directions:

1. Prepare the Oven: Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).

2. Make the Meatballs: In a large mixing bowl, gently combine the ground chicken, egg, panko breadcrumbs, chopped cilantro, grated yellow onion, minced garlic, and season generously with salt and pepper. Mix until just combined, being careful not to overmix. Shape the mixture into approximately 1-inch size balls (you should yield about 12 meatballs). Place them evenly spaced on a baking sheet. Bake for about 10 minutes, or until the meatballs are golden brown and cooked through. Once done, set them aside.

3. Prepare the Creamy Refried Beans: While the meatballs are baking, preheat a small saucepan over medium-low heat. Add the refried beans to the saucepan. Gradually stir in the grated cheddar cheese and milk. Continue to stir frequently until the cheese has melted, and the beans have softened into a smooth, creamy consistency. Remove from heat and keep warm.

4. Crisp the Tortillas: If not already done, you can lightly crisp your corn tortillas in the preheated oven for a few minutes until they are slightly firm but still pliable, or quickly heat them in a dry skillet or microwave.

5. Assemble the Stacks: To serve, begin by placing one crisped corn tortilla on a plate. Spread about 2 tablespoons of the warm, creamy refried beans evenly over the tortilla. Next, spoon approximately 1 tablespoon of the heated red enchilada sauce on top of the beans. Carefully place three of the cooked chicken meatballs on the sauce layer. Cover with a second tortilla and repeat the layering process (beans, sauce, meatballs). Finally, top with the third and last tortilla.

6. Garnish and Serve: Garnish your magnificent stack generously with more warm red enchilada sauce, chopped fresh tomatoes, a dollop of sour cream, slices of jalapeños, and a sprinkle of shredded Pepper Jack cheese. Serve immediately and enjoy the fiesta of flavors!
