1 large carrot, diced
1 yellow bell pepper, diced
1 15 oz can Muir Glen diced Italian herb tomatoes (reserve a few spoonfuls for a vibrant garnish)
1 1/2 cups water
1 teaspoon red pepper flakes (or more, to taste)
2 large eggs
Freshly grated Parmesan cheese, for generous garnish
Salt and freshly ground black pepper to taste
