For many, the meatball sandwich represents the ultimate indulgence. As the comedian Jim Gaffigan once quipped about meatball subs, it’s like eating five burgers. If you were to flatten each meatball, you’d indeed end up with a substantial amount of deliciousness. And who doesn’t love a good, juicy burger? So, it’s only natural to gravitate towards the meatball sub, especially when it offers a more exciting and flavorful alternative to a cold, standard turkey sandwich.

Our inspiration for these Butter Turkey Meatball Subs comes from a desire to elevate everyday meals and introduce a unique twist to a beloved classic. While we adore the traditional marinara sub, we felt there was an opportunity to infuse the sub shop menu with more diverse and exciting options. This “East meets West” concept for our turkey meatballs delivers serious flavor that will captivate your taste buds from the very first bite.

Preparing Butter Turkey Meatball Subs

The secret to these incredibly flavorful meatballs lies in a carefully selected blend of aromatic spices and rich ingredients. We’re talking about the warm, fragrant notes of garam masala, the zesty kick of fresh ginger, the earthy depth of curry powder, and the golden hue of turmeric. These traditional Indian-inspired spices are beautifully balanced with creamy coconut milk and a touch of sour cream, creating a luscious sauce that perfectly coats each tender turkey meatball. The result is a sauce that’s both comforting and exhilarating, a true highlight of this recipe.

Choosing ground turkey for these meatballs offers a lighter alternative to traditional beef or pork, without compromising on flavor or juiciness. Turkey meatballs absorb the rich spices and creamy sauce wonderfully, making them incredibly tender and moist. They are the perfect canvas for our vibrant flavor profile, ensuring a meal that feels indulgent yet remains wholesome.

Buttery Turkey Meatballs in Sauce

Once your incredibly aromatic meatballs are baked to perfection and generously coated in their flavorful sauce, the next step is pure magic. Simply stuff them into soft, buttery brioche or hoagie rolls. These rolls are then topped with a generous layer of shredded mozzarella cheese and briefly placed under the broiler. This crucial step allows the cheese to melt into a bubbly, golden blanket, creating an irresistible finish that perfectly complements the rich flavors of the meatballs. The combination of warm, spiced meatballs, melted cheese, and a soft, toasted roll is truly heavenly.

Preparing these Butter Turkey Meatball Subs is a straightforward process, making them an ideal choice for busy weeknights or when you need a crowd-pleasing dish without much fuss. The meatballs come together quickly with ground turkey, egg, panko bread crumbs, and seasoning. Baking them ensures even cooking and less mess, while keeping them tender. The sauce is equally simple, building layers of flavor by sautéing onions, garlic, and ginger, blooming the spices, and then enriching it with tomato paste, coconut milk, sour cream, and butter.

Butter Turkey Meatball Subs

Yield: 4 meatball subs

Prep Time: 10 minutes

Cook Time: 20 minutes

Ingredients:

  • 1 lb ground turkey
  • 1 egg
  • 1/2 cup panko bread crumbs
  • salt and pepper to taste
  • 1 tbsp olive oil
  • 1/3 cup chopped yellow onion
  • 1 garlic clove, grated
  • 2 tsp fresh ginger, grated
  • 1 tbsp garam masala
  • 2 tsp curry powder
  • 1/2 tsp turmeric
  • 1/2 tsp cayenne
  • 6 ounces tomato paste
  • 1 14oz can unsweetened coconut milk
  • 1/3 cup sour cream
  • 2 tbsp unsalted butter
  • 4 brioche sub rolls or any hoagie roll
  • 1 cup shredded mozzarella
  • Fresh chopped cilantro, for garnish

Directions:

  1. Preheat an oven to 400 degrees F (200 degrees C). Spray a baking sheet with non-stick cooking spray.
  2. In a large bowl, gently combine the ground turkey, panko bread crumbs, egg, salt, and pepper. Be careful not to overmix, as this can lead to tough meatballs. Using a one-inch sized ice cream scoop or your hands, form roughly 12 meatballs and arrange them evenly on the prepared baking sheet.
  3. Bake the meatballs for about 12 to 14 minutes, or until cooked through and lightly browned. Remove from the oven and set aside.
  4. While the meatballs are baking, prepare the sauce. In a large skillet preheated to medium-high heat, add the olive oil. Once shimmering, add the chopped yellow onion, grated garlic, and grated fresh ginger. Sauté for a few minutes until the onion softens and becomes translucent, and the aromatics are fragrant.
  5. Next, stir in the garam masala, curry powder, turmeric, and cayenne pepper. Cook for about one minute, stirring constantly, allowing the spices to bloom and release their aromas. This step is key for developing deep flavor.
  6. Add in the tomato paste and unsweetened coconut milk. Stir vigorously until all ingredients are well combined and the sauce is smooth. Reduce the heat to medium-low and let the sauce simmer gently, allowing it to thicken slightly to your desired consistency.
  7. Once the sauce has thickened, stir in the sour cream and unsalted butter until fully incorporated and the sauce is rich and creamy.
  8. Carefully add the cooked turkey meatballs into the skillet, tossing them gently to ensure they are thoroughly coated in the delicious sauce. Turn off the heat.
  9. To assemble the subs, take a brioche or hoagie roll and stuff about three meatballs into the center. Sprinkle approximately 1/4 cup of shredded mozzarella cheese on top of the meatballs. Repeat this process with the remaining rolls.
  10. Place the assembled rolls onto another baking sheet. Set the baking sheet under the broiler for 1-3 minutes, watching carefully, until the cheese is melted and bubbly and the rolls are lightly toasted.
  11. Remove the subs from the broiler and immediately garnish with fresh chopped cilantro. Serve hot and enjoy these incredible Butter Turkey Meatball Subs!
