1 bunch asparagus, trimmed, cut into 1-inch pieces

1 1/4 cups frozen peas

Scallions, sliced thinly, for garnish

Fresh chopped parsley, for garnish

Salt and pepper to taste

For the Zesty Mustard Vinaigrette:

1 garlic clove, grated

1/3 cup Dijon mustard

1 tbsp red wine vinegar

1 tsp honey

1/4 tsp cayenne

1/3 cup olive oil

1 tbsp water

Step-by-Step Directions:

1. Prepare the Steak: Place the flank steak on a baking sheet. Drizzle and rub 2 tablespoons of Signature SELECT olive oil evenly over all sides of the steak. In a small bowl, combine the ground Signature SELECT coffee, garlic powder, 1/2 teaspoon cayenne pepper, salt, and black pepper. Mix well. Generously rub this aromatic coffee mixture all over the flank steak, pressing gently to ensure it adheres. Let the flank steak sit at room temperature for at least 30 minutes; this crucial step allows the steak to cook more evenly and tenderly.

Cook for about four to five minutes on the first side to achieve a deep, caramelized crust. Flip the steak and continue to cook for another two to three minutes for medium-rare, or longer to your desired doneness. Once cooked, remove the flank steak from the skillet and place it on a cutting board. Tent it loosely with foil and allow it to rest for at least five minutes before slicing. This resting period is essential for juicy, tender steak.

5. Sauté the Vegetables: After removing the steak, carefully drain most of the excess fat from the skillet, leaving about 1 tablespoon to cook the vegetables. Reduce the skillet heat to medium. Add the diced shallots along with a pinch of salt and pepper. Cook, stirring occasionally, until the shallots soften and become fragrant, about two minutes. Next, add the frozen peas with a splash of water and cook until the peas are tender-crisp, approximately five minutes. Finally, add the 1-inch pieces of asparagus stems. Cook the asparagus until it’s tender but still retains a slight bite, about five minutes.
