He showed me that organization could be an enjoyable pursuit, not a chore, often emphasizing the power of highlighters to bring clarity to chaos. This practical wisdom extended to more significant challenges, like helping me craft compelling campaign speeches for Student Council, teaching me the critical importance of a budget, and underscoring the value of financial responsibility. His commitment to my endeavors was boundless; I vividly recall him driving halfway across the state of Kansas just to watch me pitch a softball game, a testament to his unwavering presence and support in every aspect of my life.

He’s the kind of dad whose comforting presence could soothe a very sick little girl with just a pinky held tight, promising everything would be alright. Years later, he’d recount that very story at my wedding reception, leaving not a single dry eye in the room. His ability to weave warmth, humor, and deep emotion into every memory is truly a gift. It makes you wonder, how did I get so incredibly lucky to have such a father?

Recipe: The Ultimate Father’s Day Peppered Steak Dinner

Peppered Steak

(The steak recipe is slightly adapted from Giada De Laurentiis’s Grilled Rib-Eye with Tomato and Poblano Chile Sauce)

Serves: 2

  • Prep Time: 30 minutes (includes freezer time for steak)
  • Cook Time: Approximately 1 hour

Ingredients

For the Steak:

  • 2 8-oz. steaks of your liking (boneless recommended for this recipe)
  • 1 tablespoon cornstarch
  • 2 teaspoons kosher salt
  • 2 1/2 teaspoons coarse black pepper

For the Baked Potato:

  • 2 russet potatoes
  • 2 tablespoons butter
  • Sour cream, for garnish
  • Fresh chives, chopped, for garnish

For the Corn-on-the-Cob:

  • 2 husks of corn, cleaned and prepped
  • 2 tablespoons unsalted butter, softened
  • 2 tablespoons Original Emeril Essence (or your favorite spicy seasoning blend)

For the Garden Salad:

  • 4 cups mixed greens
  • 1 cup grape tomatoes, halved
  • 1/4 cup red onion, julienned
  • 1/2 cucumber, sliced

For the Dijon Vinaigrette:

  • 1/4 cup olive oil
  • 2 teaspoons red wine vinegar
  • 1 teaspoon honey
  • 1 teaspoon granulated sugar
  • 1 1/2 teaspoons Dijon mustard
  • Salt and freshly ground black pepper, to taste

Directions

For the Steak:

  1. In a small bowl, thoroughly mix together the kosher salt, coarse black pepper, and cornstarch.
  2. Place the steaks on a small baking sheet. Generously cover both sides of each steak with the cornstarch mixture, patting it gently to adhere.
  3. Place the baking sheet with the seasoned steaks into the freezer for 30 minutes. This seemingly unusual step helps to create a fantastic crust and lock in the juices.
  4. Once 30 minutes have passed, preheat your gas grill to medium-high heat.
  5. Grill the steaks for 5 to 7 minutes on each side, or until your desired level of doneness is achieved (e.g., medium-rare, medium). Let the steaks rest for a few minutes before slicing or serving to allow the juices to redistribute.

For the Baked Potato:

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Wash the russet potatoes thoroughly and pat them completely dry.
  3. Using a fork, poke 4-5 holes evenly on each side of the potatoes. This allows steam to escape during baking.
  4. Place the pierced potatoes directly on an oven rack or on a baking sheet. Bake for about 45 minutes to 1 hour, or until the skin is golden brown and crispy, and the inside is soft when squeezed.
  5. Let the potatoes cool slightly before serving. Carefully slice each potato open lengthwise, fluff the inside with a fork, then top each with 1 tablespoon of butter, a generous dollop of sour cream, and a sprinkle of fresh chives.

For the Corn-on-the-Cob:

  1. Preheat your gas grill to medium-high heat.
  2. Tear off two pieces of aluminum foil, large enough to wrap each cob. Lightly spray the inside of each foil piece with non-stick cooking spray.
  3. Rub one tablespoon of softened unsalted butter all over each cleaned corn cob.
  4. Sprinkle 1 tablespoon of Emeril Essence evenly over each buttered corn cob.
  5. Wrap each cob tightly in its piece of aluminum foil.
  6. Place the foil-wrapped corn on the preheated grill. Grill for 20-30 minutes, flipping once halfway through, until the corn is tender and slightly charred.

For the Garden Salad:

  1. Wash and thoroughly prep all the salad ingredients (mixed greens, grape tomatoes, red onion, cucumber).
  2. Place all the prepared vegetables in a large serving bowl.

For the Dijon Vinaigrette:

  1. In a small bowl, whisk together the olive oil, red wine vinegar, honey, granulated sugar, and Dijon mustard until well combined.
  2. Season the vinaigrette with salt and freshly ground black pepper to taste.
  3. Just before serving, drizzle the vinaigrette over the garden salad ingredients and toss gently to coat.
