While Iowa traditionally reigns supreme in pork production, Michigan is steadily making its mark, largely thanks to innovative advancements like filtering barns – a topic I’m eager to delve into. This journey offered a unique opportunity to witness firsthand how the pork industry has evolved, continually striving for the betterment of animal welfare and, consequently, the quality of pork we enjoy.

Behind the Scenes: A Food Blogger’s Dedication to Understanding Our Food System

As a food blogger, a crucial aspect of my role involves thorough due diligence – constantly seeking to understand the origins of our food. Have you ever heard of a filtering barn? Prior to this trip, neither had I! This innovation marks a significant leap forward in animal husbandry. Historically, pigs were often raised outdoors, which, while seemingly natural, exposed them to unpredictable weather conditions, potential illnesses, and numerous environmental variables. The shift to indoor raising, facilitated by these advanced filtering barns, allows farmers to meticulously control the pigs’ environment, resulting in healthier animals and, consequently, higher quality pork for consumers.

Inside these state-of-the-art facilities, farmers employ sophisticated filter systems designed to prevent airborne illnesses and diseases from reaching the pigs. Remarkably, these systems often utilize HEPA filters, similar to those found in hospitals, underscoring the level of biosecurity implemented. These filters are meticulously checked daily to ensure their integrity and efficiency. Furthermore, advanced climate control systems are installed to maintain optimal temperature and humidity, ensuring the pigs remain comfortable and stress-free – a truly “Four Seasons” experience for our porcine friends, if you will. This controlled environment not only protects the pigs from external threats but also allows for precise monitoring of their health and well-being, reflecting a profound commitment to responsible farming.

Pumpkin Cream Sauce with Ground Pork

Yield: 4 cups

Prep Time: 5 minutes

Cook Time: 15 minutes

Ingredients:

  • 1 tbsp olive oil
  • 1 lb ground pork
  • 1 large shallot, minced
  • 1 garlic clove, minced
  • 1 cup chicken stock
  • 1 cup pumpkin puree
  • 1/2 cup heavy whipping cream
  • 3 to 4 sage leaves, roughly chopped
  • 1 tbsp chopped rosemary
  • 1 tbsp thyme
  • 1 large egg
  • 1/2 cup Gruyere cheese
  • salt and pepper to taste

Directions:

  1. In a large skillet preheated to medium-high heat, add the olive oil and ground pork. Break up the pork using a wooden spoon. Cook until the pork is no longer pink, about five minutes. Remove the pork from the skillet and set aside on a plate.
  2. In a medium bowl, combine pumpkin puree, heavy cream, sage leaves, rosemary, thyme, egg, Gruyere cheese, salt, and pepper.
  3. In the same skillet used for the pork, add a touch more olive oil. Add the minced shallots, garlic, salt, and pepper. Stir to combine and cook for a few minutes until fragrant. Next, pour in the pumpkin mixture. Continue to stir gently, then gradually add the chicken stock. Keep adding more chicken stock as needed until your desired consistency is reached.
  4. Remove the skillet from the heat and then stir in half of the cooked ground pork. Reserve the remaining pork for another delicious filling or recipe.
