Ingredients:

  • 3 tablespoons olive oil
  • 1 cup mushrooms, sliced
  • 1/2 cup carrots, diced
  • 1 cup brussel sprouts, shredded
  • 1/2 cup yellow onion, diced
  • 1 green bell pepper, diced
  • 3 garlic cloves, minced
  • 1 cup butternut squash, peeled and cubed
  • 1 1/2 tablespoons tomato paste
  • 1 15oz can tomato sauce
  • 1 15oz can diced fire roasted tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional, for a kick)
  • 1/2 teaspoon dried thyme
  • 1 bay leaf
  • 1/3 cup chicken stock (or vegetable stock for a vegetarian option)
  • 1/3 cup whole milk
  • 1/4 cup Parmesan cheese, grated
  • 1/2 cup mozzarella cheese, shredded
  • 1 cup Brie cheese (rind removed), cut into chunks
  • 1/2 pound penne pasta
  • Fresh basil, for garnish
  • Salt and freshly ground black pepper, to taste

Directions:

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. In a large Dutch oven or oven-safe pot, heat the olive oil over medium-high heat. Add the sliced
    mushrooms and sauté until they are slightly golden brown and have released their moisture, about 5-7
    minutes.
  3. Next, add the diced carrots, shredded brussels sprouts, diced yellow onion, diced green bell pepper,
    minced garlic, cubed butternut squash, a pinch of salt, and a dash of black pepper to the Dutch
    oven. Sauté the vegetables, stirring occasionally, until they begin to soften, which should take
    approximately 10 minutes. If the vegetables start to stick to the bottom of the pan, add a little more
    olive oil.
  4. Once the vegetables are tender, stir in the tomato paste. Cook for 1-2 minutes, allowing the paste
    to deepen in color and flavor, stirring constantly.
  5. Pour in the tomato sauce and the diced fire-roasted tomatoes. Add the garlic powder, dried oregano,
    red pepper flakes (if using), dried thyme, bay leaf, and chicken stock. Stir thoroughly to ensure
    all ingredients are well combined. Bring the mixture to a gentle simmer and let it cook, uncovered, for
    about 15 minutes, allowing the flavors to meld beautifully.
  6. While the sauce simmers, bring a large pot of heavily salted water to a rolling boil. Add the penne
    pasta and cook according to package directions until it is al dente (firm to the bite), typically
    around 10 minutes. Drain the pasta thoroughly through a colander.
  7. Carefully remove the bay leaf from the finished sauce and discard it. Add the cooked penne pasta
    directly to the Dutch oven with the vegetable bolognese sauce. Stir in the whole milk and grated
    Parmesan cheese until evenly distributed and the pasta is well coated. Let it simmer gently for another
    few minutes to allow the pasta to absorb some of the sauce’s richness.
  8. If your Dutch oven is oven-safe, proceed to the next step using the same pot. Otherwise, lightly
    grease a 9×13 inch baking dish with non-stick cooking spray. Pour the pasta mixture into the prepared
    baking dish.
  9. Arrange the chunks of brie cheese and shredded mozzarella cheese evenly over the top of the pasta
    mixture, ensuring good coverage for a beautiful melted crust.
  10. Cover the baking dish loosely with aluminum foil and bake in the preheated oven for 30 minutes.
  11. Remove the foil and increase the oven temperature to broiler setting (or 400°F/200°C if your
