Ingredients:
for the chili:
1 tablespoon olive oil
2 garlic cloves, minced
1 yellow onion, diced
2 pounds lean ground beef
2 tablespoons chili powder
1 tablespoon ground cumin
1 tablespoon garlic powder
1 tablespoon ground coriander
1 tablespoon paprika
1 (15oz) can black beans, drained and rinsed
2 (15oz) cans fire-roasted diced tomatoes, undrained
1 (15oz) can kidney beans, drained and rinsed
1 green bell pepper, chopped
1 red bell pepper, chopped
2 chipotle peppers in adobo sauce, minced (adjust to preferred spice level)
3 cups beef stock
Sour cream, for garnish
Tortilla strips, for garnish
Fresh cilantro, chopped, for garnish
Fresh jalapeño rounds, for garnish
Salsa, for garnish
Salt and freshly ground black pepper, to taste
for the queso:
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
1 cup whole milk
3/4 cup sharp cheddar cheese, shredded
Salt and freshly ground black pepper, to taste
for the jalapeño cornbread croutons:
1 cup yellow cornmeal
1 cup all-purpose flour
1/3 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon kosher salt
1 large egg
1/4 cup vegetable oil
1 jalapeño, deseeded and finely diced
1 cup whole milk
Directions:
for the chili:
1. In a large skillet, heat the olive oil over medium-high heat. Add the diced yellow onion, minced garlic, and ground beef. Season with a pinch of salt and pepper. Sauté the mixture, breaking up the beef, until the meat is fully cooked through and browned, and the onions are softened, about 8-10 minutes. Drain any excess fat.
2. Carefully transfer the cooked beef and onion mixture into your slow cooker. Add the chili powder, ground cumin, garlic powder, ground coriander, paprika, drained black beans, undrained fire-roasted diced tomatoes, drained kidney beans, chopped green bell pepper, chopped red bell pepper, minced chipotle peppers in adobo sauce, and beef stock. Stir all the ingredients together thoroughly to combine everything well.
3. Place the lid securely on the slow cooker. Cook on the low setting for 6 to 8 hours, or on the high setting for 3 to 4 hours, or until the chili is rich in flavor and the vegetables are tender.
