Ingredients:

For the Crust:
1 unfrozen packaged pie dough or homemade pie crust
1 egg, whisked

For the Filling:
2 sticks cold unsalted butter, cubed
1 1/2 cups granulated sugar
4 ounces Lindt CLASSIC RECIPE Caramel & Sea Salt Milk Chocolate, chopped finely
1 teaspoon vanilla extract
1 teaspoon whiskey
4 large cold eggs

For the Toasted Marshmallow Topping:
2 egg whites
¼ teaspoon kosher salt
¼ cup granulated sugar
¾ cup corn syrup
1 teaspoon vanilla extract

Directions:

Preheat your oven to 400°F (200°C).

For the Crust:

  1. Roll out your pie dough into a 12-inch circle. Carefully transfer the dough to a 9-inch pie plate that has been lightly sprayed with non-stick cooking spray. Trim away any excess dough from the edges.
  2. Using a fork, prick the bottom and sides of the pie crust all over. This prevents it from puffing up too much during baking.

  4. In a stand mixer fitted with a whisk attachment, combine the cold, cubed unsalted butter and granulated sugar. Whisk on medium-high speed, scraping down the sides of the bowl as needed, until the mixture is light and fluffy, about 4 to 5 minutes.
  5. Slowly pour the completely cooled melted chocolate over the butter-sugar mixture. Continue to whisk, again scraping down the sides of the bowl to ensure everything is well incorporated.
  6. Add the vanilla extract and whiskey to the mixture and continue whisking until thoroughly combined.
  7. Now, add the eggs one at a time. Crack one cold egg into the chocolate mixture. Set a timer for exactly five minutes and whisk the egg into the mixture.
  8. Once five minutes are up, scrape down the sides of the bowl. Repeat this process three more times with the remaining eggs, whisking each egg for five minutes individually. This 20-minute commitment (5 minutes per egg) is essential for achieving the pie’s signature smooth, silky texture and is absolutely worth the effort!
  9. After whisking the final egg, scrape down the sides of the bowl one last time and ensure the filling is perfectly combined and smooth.
