While my feet have yet to touch the sun-drenched soil of Spain – a travel dream firmly etched onto my bucket list – I hold a profound fascination with Spanish cuisine. Hopefully, with recent changes in my husband’s travel schedule, that dream will soon become a reality. Among the many delights of Spanish cooking, one dish, in particular, has captured my culinary heart: Fideuà. Often likened to paella but distinctly made with short, thin noodles instead of rice, Fideuà is a magnificent one-pot wonder. It’s truly one of those dishes where you can practically throw everything but the kitchen sink into the pot, creating a spectacular medley of flavors and textures. Each spoonful is like a miniature fiesta in itself, offering a burst of Mediterranean warmth and spice.
The Art of Browning Noodles for Exceptional Flavor
The secret to an outstanding Fideuà lies in a crucial initial step: browning the noodles. Ingredients:
- 4 tablespoons olive oil
- 3 cups spaghetti, broken into 2-inch pieces
- 1 red pepper, chopped
- 1 orange pepper, chopped
- ½ large yellow onion, chopped
- 2 medium tomatoes, chopped
- 2 garlic cloves, chopped
- 3 cups chicken stock

- 1 cup corn kernels, roasted (optional, but adds sweetness)
- 1 package of chicken Andouille sausage, sliced, cooked
- ½ pound shrimp, peeled and cooked
- Parmesan cheese, for garnish
- Scallions, sliced, for garnish
- Salt and freshly ground black pepper, to taste
Directions:
- Preheat a small saucepan over medium-low heat. Add the chicken stock to the pan along with a generous pinch of saffron. Allow the saffron to steep and infuse the broth, keeping it warm but not boiling.
- In a large Dutch oven or a wide, shallow pan, preheat two tablespoons of olive oil over medium-high heat. Add the broken spaghetti pieces and brown them for several minutes, stirring frequently, until they achieve a rich golden color and nutty aroma. Remove the browned noodles from the Dutch oven and set them aside.
- Add the remaining two tablespoons of olive oil to the Dutch oven. Sauté the chopped onion, red pepper, orange pepper, and garlic over medium-high heat. Season with a little salt and pepper. Cook for a few minutes until the vegetables begin to soften.
- Stir in the chopped tomatoes and roasted corn (if using). Continue to cook until the tomatoes have started to break down and release their juices.
- Pour the warm, saffron-infused chicken broth into the Dutch oven and bring the mixture to a rolling boil.
- Return the browned spaghetti to the Dutch oven. Cook, stirring occasionally, until the noodles are softened and most of the chicken stock has been absorbed. The Fideuà should have a risotto-like consistency.
- To serve: Ladle the Fideuà mixture into individual bowls. Arrange a few pieces of cooked Andouille sausage and shrimp on top of each serving. Garnish generously with freshly grated Parmesan cheese and sliced scallions. Serve immediately and enjoy your Spanish fiesta!
