Pumpkin Quinoa Casserole with Gruyere & Fresh Herbs

Yield: Serves 4

Prep Time: 20 minutes

Cook Time: 40 minutes

Ingredients:

For the Quinoa:
1 cup water
2 cups quinoa
1/2 cup Gruyere cheese, grated

For the Chicken Sausage:
1 tablespoon olive oil
1 pound ground chicken sausage

For the Pumpkin Sauce:
1 large shallot, minced
1 garlic clove, minced
1 tablespoon olive oil
1 cup chicken stock (+ more if needed)
1 cup pumpkin puree
3 or 4 sage leaves, chopped ( + more for garnish)
1 tablespoon rosemary, chopped (+ more for garnish)
1 tablespoon thyme, chopped (+ more for garnish)
1 egg
1/2 cup Gruyere cheese, shredded (+ more for garnish)
1/2 cup cream
1 cup mozzarella, shredded, garnish

Directions:

1. Preheat Oven: Preheat your oven to 400 degrees Fahrenheit.

2. Cook the Quinoa: In the Swiss Diamond skillet, add the water and quinoa. Bring the mixture to a boil, then stir well. Reduce the heat to a simmer, cover the skillet with its lid, and cook for approximately 15 minutes, or until all the water has been absorbed and the quinoa is tender. Once cooked, remove the lid, turn off the heat, fluff the quinoa gently with a fork, and stir in the grated Gruyere cheese until melted and combined. Pour the cooked quinoa into a separate bowl and set aside. Using a clean cloth, carefully wipe the skillet clean, preparing it for the next step.

3. Sauté the Chicken Sausage: Return the same skillet to medium heat and add the olive oil. Once hot, add the ground chicken sausage. Sauté the chicken sausage for about 7 minutes, breaking it up with a spoon, until it is fully cooked through and browned evenly. Scoop the cooked chicken sausage into a bowl and set aside. Again, using a cloth, wipe the skillet clean.

4. Prepare the Pumpkin Sauce: In a medium bowl, combine the pumpkin puree, cream, chopped sage leaves, rosemary, thyme, egg, shredded Gruyere cheese, and a pinch of salt and pepper. Stir all ingredients thoroughly to combine them into a smooth mixture. Place the cleaned skillet back on the stovetop over medium-high heat and add 1 tablespoon of olive oil. Add the minced shallots and garlic, along with a little salt and pepper, and cook, stirring frequently, for a few minutes until the shallots have softened and become translucent. Pour the pumpkin mixture from the bowl into the skillet. Stir well, then gradually whisk in the chicken stock until fully incorporated. Add more chicken stock if the sauce appears too thick, adjusting to your desired consistency. Continue to cook the sauce for a couple of minutes until it is heated through and slightly thickened.

5. Assemble and Bake the Casserole: To serve, add the cooked chicken sausage and the fluffy quinoa back into the skillet with the pumpkin sauce. Gently toss all ingredients to combine them thoroughly, ensuring the quinoa and sausage are well coated with the flavorful sauce. Evenly top the casserole with shredded mozzarella and additional Gruyere cheese for a rich, golden crust. Place the skillet, without the lid, into the preheated oven and bake for approximately 15 minutes. For the last 5 minutes of baking, turn on the broiler to achieve a beautifully golden-brown and bubbling cheese topping.
