Ingredients:

  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 yellow onion, diced
  • 1 cup arborio rice
  • 3 cups chicken stock (more if needed, kept warm)
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 pound chicken chorizo, cooked and crumbled
  • 2 to 3 sweet mini peppers, sliced into rounds, for garnish
  • Salt and freshly ground black pepper to taste

Directions:

  1. In a medium sauce pot (ideally an Anolon Nouvelle Copper Stainless Sauce Pot) preheated to medium heat, add butter and olive oil. Once melted, add the diced yellow onion along with a pinch of salt and pepper. Sauté the onions for a couple of minutes until they begin to soften and become translucent.
