Autumn Acorn Squash Pita “Nachos” with Pomegranates & Blue Cheese

Yield: Serves 4

Prep Time: 15 minutes

Cook Time: 40 minutes

Ingredients:

2 tablespoons olive oil
1 acorn squash, seeds removed, sliced into half moons
1/4 teaspoon red pepper flakes
1 cup farro, cooked
1/2 cup pomegranate seeds
1/2 cup blue cheese, crumbled
1/2 cup mozzarella, shredded
3 whole pitas, cut into triangles, toasted
Salt and freshly ground black pepper to taste

Directions:

1. Preheat your oven to 400°F (200°C). Lightly spray a baking sheet with non-stick cooking spray or line it with parchment paper.

2. Arrange the acorn squash half-moons in a single layer on the prepared baking sheet. Drizzle generously with olive oil, then sprinkle with red pepper flakes, salt, and freshly ground black pepper. Bake for approximately 30 minutes, or until the squash is tender and beautifully golden brown at the edges. Remove from oven.

3. While the squash is baking, if your pitas are not already toasted, quickly toast the pita triangles in a separate dry pan or in the oven for a few minutes until lightly crispy. Be careful not to over-brown them.

4. On a separate clean baking sheet, arrange half of the toasted pita triangles in a single layer.

5. Evenly top these pita triangles with 1/2 cup of the cooked farro, 1/2 cup of the roasted acorn squash, 1/4 cup of the crumbled blue cheese, and 1/4 cup of the shredded mozzarella.

6. Repeat the layering process with the remaining pita triangles, followed by the rest of the farro, acorn squash, blue cheese, and mozzarella.

7. Place the baking sheet back into the preheated oven for 5 to 10 minutes, or until the cheeses are melted and bubbly, and the nachos are heated through and golden brown. Keep a close eye on them to prevent burning.

8. Carefully remove the baking sheet from the oven. Garnish generously with fresh pomegranate seeds just before serving.
